Téj is a traditional Ethiopian honey wine, also known as mead. It is a well-known and beloved beverage in Ethiopian culture.

Ingredients:

  1. 1 pound (about 450 grams) of honey
  2. 1 gallon (about 3.8 liters) of water
  3. 1/2 cup of teff or barley
  4. Additional flavorings (optional), such as cinnamon sticks or cloves

Instructions:

Sterilization: In a large pot, mix the honey and water. Heat the mixture slowly to a simmer, stirring until the honey is completely dissolved. Simmer for about 5 minutes. This process sterilizes the mixture and helps to remove any impurities. Let it cool to room temperature.

Fermentation Starter: In a separate container, prepare the teff or barley as a fermentation starter. Rinse it well and then toast it in a dry skillet until it's slightly browned, which helps activate the natural yeast on the grains. Let the grains cool.

Combine and Ferment: Pour the honey-water mixture into a large, sterilized glass or food-grade plastic container with a lid. Add the toasted teff or barley and any optional flavorings like cinnamon sticks or cloves. Stir well to combine.

Fermentation: Cover the container with a clean cloth or plastic wrap secured with a rubber band or string. Store it in a dark, cool place, away from direct sunlight. Allow the mixture to ferment for at least 1-2 weeks, or longer if desired. The fermentation time can vary based on the temperature and the desired flavor.

Filter and Serve: Once the Téj has fermented to your liking, strain the liquid through a fine-mesh sieve or cheesecloth to remove the teff or barley and any solid particles. Transfer the clear Téj into clean glass bottles or containers with lids.

Aging (Optional): For more complex flavors, you can age the Téj in the bottles for a few months to develop its taste.

Serving: Serve the Téj chilled in wine glasses or traditional Ethiopian drinking vessels. It's often enjoyed as a social and celebratory drink, especially during special occasions and gatherings.
